Ingredients

1 1/2 cups plain flour

1 tablespoon caster sugar

1 tablespoon baking powder

50gm melted butter

1 cup of milk

3 eggs

Method

Makes 12

Whisk the flour, sugar and baking powder together in a large bowl.
Make a well in the centre of the flour mix.
In a separate bowl combine the melted butter, milk and eggs together.
Add wet ingredients to the dry ingredients and whisk until smooth.

Heat a non stick fry pan over a low-medium heat. Lightly grease fry pan.
Add 1/4 cup of pancake batter to the pan.
cook for 1-2 minutes until bubbles appear and break and the underside has browned.
Flip the pancake over and cook for another minute.

Place pancake onto a plate and cover or place in a low oven to keep warm
Repeat with the remaining mixture.

Top pancakes with Food Symphony Blueberries in Lemon and Gin Syrup and your choice of cream or ice cream.
